Carrots are one of my favorite staple crops for self-sufficiency. On their own, they make a huge dent in our vegetable supply for the year. My favorite variety to grow for storage carrots is Danver half long. I harvest around 150 pounds of carrots in one day, throw them into grocery bags, tape them up, and store them in a refrigerator in our basement. No canning or freezing needed.
